HEART-HEALTHY VEGETABLE DISHES?
Q: Where are some heart-healthy recipes featuring vegetables? I could use some. Lynda.
A: Lynda: Many, many on the site. Pasta alla Norma, a Sicilian pasta preparation that uses eggplant. Another Italian dish, Assorted Cooked Vegetables on a Bed of Wilted Greens, served cool or at room temperature and, so, excellent for summer eating. Sweet and Sour Parsnips and Pears, a recipe from the Middle Ages. And Heirloom “Three Sacred Sisters Salad,” a legacy of the American Southwest.
Edna Lewis’s Skillet Asparagus treats the vegetable simply—and deliciously. (Here also are Five Ways with Asparagus, to add to Ms. Lewis’s treatment.) Orzo Salad with Spinach, Feta, Mint and Olives—if you are a vegetarians who eats cheese—is very cooling in summer’s heat.
Carrot and Parsnip “Osso Buco” to warm you up on a chilly night at any time of year. And Super-Smooth Warm Hummus to eat for breakfast the way the recipe’s Israeli author does it. Or Harira, a legume dish eaten by Moroccans for their breakfast. Or, from the other side of Africa, Fossolia, an all-vegetable Ethiopian dish, rich in history and flavor both.
Roast a Whole Head of Cauliflower as Pot Roast. Or slice root vegetables paper-thin for a Vegetable Carpaccio. And there’s India’s Baigan Bharta, BSJ’s favorite eggplant dish. Well, until he discovered Ajapsandali, from the country of Georgia.
