MAXED-OUT BAKED POTATO
Q. “How do you cook a baked potato? (I like them probably overcooked and love when the skin gets a little crispy.) And how would you make it a main course for an easy dinner?” Devany
A. Dev, I share your baked potato awesomeness criteria of (1) being a bit overcooked and (2) having crispy skin. Here’s what I do for a baked potato to be eaten as a “main course.” I simply bake a big one, then do open-heart and slap in whatever cheese, crème fraîche, vegetable matter, bacon, etc., that I want to round out the menu. Hot sauce works, butter, extra virgin olive oil, all three! Ha.
Preheat oven to 450 degrees; pierce the potato lightly a couple of times with the tines of a fork.
Microwave the potato on High, 5 minutes on one side, flip it, then 5 minutes on the other side.
Place potato on a metal baking sheet; heat in the oven for 2 minutes to crisp the skin.
Slice, fill, eat, enjoy.
