SHOKUPAN, JAPANESE MILK BREAD

Q.: “I love baking all different types of breads. The one I have not been able to find a recipe for is called cake bread. It is Asian ( I had it in China) and is not a sweet bread. It has the consistency of a very light and airy pound cake, not as springy as angel food cake. It is like a yeast bread, something you could use as a daily bread. I have not been able to find any recipes at all for it.” Cindy T.

A.: Hi Cindy; sounds a lot like what some call “milk bread” (or 'shokupan' in Japanese). Here is recipe to make it yourself, from New York Times.
